Let’s face it its a firm favorite and this version packs a punch on flavor and never just to have with rice .. Can have with quinoa, a green salad, as a jacket potato topper, with pitta bread.
Chilli Recipe
What you need:
- 1 Onion – chopped
- 1 tsp coconut
- 2 garlic cloves – crushed
- 1 red pepper. – cut into strips
- 10 button mushrooms
- 100ml Veg stock
- 1 tsp marmite
- 400g tin of tomatoes
- 400g of kidney beans
- 2 tbsp tomato paste
- 1 tsp ground cumin
- ½ tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp chilli powder
- Salt and pepper
What to do:
- Sautee onion and garlic in the coconut oil until soft, not brown
- Add pepper, mushrooms, veg stock, and marmite – turn the heat down and simmer for 5 mins
- Add the chopped tomatoes, kidney beans, tomato puree, and all the herbs and spices
- Bring back to the boil and then turn the heat down and simmer for 20 mins until thickened stirring frequently.
