#plantnom – recipes for the plant curious

Let’s face it its a firm favorite and this version packs a punch on flavor and never just to have with rice .. Can have with quinoa, a green salad, as a jacket potato topper, with pitta bread.

Chilli Recipe

What you need:

  • 1 Onion  – chopped
  • 1 tsp coconut
  • 2 garlic cloves  – crushed
  • 1 red pepper. – cut into strips
  • 10 button mushrooms
  • 100ml Veg stock
  • 1 tsp marmite
  • 400g tin of tomatoes
  • 400g of kidney beans
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • ½ tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp chilli powder
  • Salt and pepper

What to do:

  1. Sautee onion and garlic in the coconut oil until soft, not brown
  2. Add pepper, mushrooms, veg stock, and marmite  – turn the heat down and simmer for 5 mins
  3. Add the chopped tomatoes, kidney beans, tomato puree, and all the herbs and spices
  4. Bring back to the boil and then turn the heat down and simmer for 20 mins until thickened stirring frequently.
