Creamy Chickpea and Spinach One Pot

Perfect for a weekday dinner when it has got to be very quick and easy ! Not strictly a ‘curry’ or a ‘stew’ so we are calling it a ‘one pot’ !Chickpeas do a lot more than just houmous !
Serve on its own, with rice, quinoa, cous cous or veggies – ENJOY !
What you need :
2 tbsp olive oil
3 garlic cloves crushed
1 red onion chopped
1 tsp paprika
1/2 tsp ground coriander
½ tsp chilli flakes
2 tbsp tomato puree
2 cans chickpeas 400g x2
200 ml veg stock
1 can coconut milk
50g ground almonds
300 g spinach
Handful of fresh coriander
What to do :
- Heat the oil in a large pan and add the garlic and onion – cook to soften them but not brown
- Keep the heat on medium to low and add in the tomato puree, paprika, ground coriander and chilli flakes – cook for 3 mins stirring frequently
- Drain the chickpeas and add to the pot with the veg stock, coconut milk and cook gently for 10 mins stirring every minute
- Add the almonds and stir well to combine them into the pot and cook for 3 mins
Remove from the heat and stir in the spinach so it wilts, finally stir in the fresh coriander and save a little to garnish.
